- 1 cup cooked rice (white or brown)
- 2 medium zucchinis, diced

- Salt and pepper, to taste
- 1 onion, chopped
- 1 teaspoon dried oregano
- Feta cheese, crumbled (optional)
- 1 pound ground beef
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
Instructions
- In a large skillet, heat the olive oil over medium heat until shimmering. Add the chopped onion and minced garlic. Sauté them for about 2-3 minutes until they become tender and translucent.
- Introduce the ground beef into the skillet, mixing it with the sautéed onion and garlic. Use a wooden spoon to break the beef apart as it cooks. Stir constantly to ensure even browning, about 5-7 minutes.
- Once the beef is browned, stir in the diced zucchini. Season with dried oregano, ground cumin, salt, and pepper. Cook for another 5-7 minutes, allowing the zucchini to soften.
- Add in the drained diced tomatoes, stirring them into the beef and zucchini mix. Let this cook for about 5 minutes to blend the flavors.
- Prepare serving bowls with a generous portion of cooked rice as the base. Spoon the beef and vegetable mixture over the rice. Garnish with fresh chopped parsley and crumbled feta cheese if desired.
