Ingredients

  • 2 large chicken breasts
  • 1 cup plain full-fat Greek yogurt
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lemon slices, for garnish

Instructions

  1. Start by grabbing a large mixing bowl. Add the Greek yogurt, minced garlic, lemon juice, olive oil, dried oregano, chopped parsley, salt, and black pepper. Whisk everything together until well combined, and the mixture is creamy and smooth.
  2. Next, place the chicken breasts in either a zip-top bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours.
  3. When you’re ready to cook, take the chicken out of the refrigerator and let it sit at room temperature for about 15–20 minutes. Preheat your oven to 400°F or heat your grill to medium-high heat. Cook chicken until done.
  4. Once cooked, remove the chicken from the oven or grill, and allow it to rest for 5 minutes. Garnish with fresh parsley and lemon slices for added flavor.

Notes

Marinate the chicken ahead of time for a quick dinner solution. This recipe can easily be doubled for larger gatherings.
