- 1.5 pounds boneless skinless chicken thighs
- 1.5 cups jasmine rice, uncooked
- 3 cups water
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1.5 teaspoons salt
- 0.5 teaspoon black pepper
- 2 cups broccoli florets
Instructions
- Begin by preheating your grill or grill pan over medium-high heat.
- Combine the olive oil, garlic powder, paprika, salt, and black pepper to create a flavorful marinade. Rub this mixture over the chicken thighs.
- While the chicken marinates, rinse the jasmine rice under cold water. In a separate saucepan, combine the rice and water; bring to a boil, reduce heat, and cover. Cook for around 15 minutes.
- Toss the broccoli florets with olive oil and a pinch of salt, spread onto a baking sheet, and roast at 400°F for 15-18 minutes.
- Place the marinated chicken on the grill, cooking for 6-7 minutes per side until the internal temperature reaches 165°F.
- Fluff the jasmine rice before serving, layer the sliced grilled chicken on top, and arrange the roasted broccoli alongside.
Notes
