- 1 tablespoon olive oil
- 4 large tortillas or flatbreads
- 1 cup cooked chickpeas (160g)
- Salt and black pepper, to taste
- 100g feta cheese, crumbled
- 1 medium zucchini (200g), sliced lengthwise
Instructions
- Start by prepping the zucchini for grilling. Slice the zucchini lengthwise into strips and brush both sides lightly with olive oil. Sprinkle with salt and pepper. Grill for 2–3 minutes on each side.
- While the zucchini is grilling, combine yogurt, herbs, lemon juice, salt, and pepper in a bowl for the yogurt sauce and chill.
- Warm your tortillas on the grill or microwave for a few seconds until soft.
- Lay a warmed tortilla flat, layer with chickpeas, grilled zucchini, feta cheese, and yogurt sauce.
- Fold in the sides and roll tightly. Slice in half if desired and serve warm.
Notes
For a vegan option, replace feta cheese with plant-based alternative and use dairy-free yogurt.
