- 1 lb ground beef
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 ½ cups orzo pasta
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 3 cups beef broth
- 2 teaspoons dried oregano
- ½ teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 1 tablespoon olive oil (if needed)
- Fresh parsley or rosemary, chopped (for garnish)
Instructions
- Start by heating a large deep skillet over medium heat.
- Once your skillet is heated, add the finely chopped onion. Sauté until soft and translucent.
- Add the minced garlic and allow it to cook for another 30 seconds.
- Add the ground beef to the pan, season with salt and freshly ground black pepper, and cook until browned.
- Push the meat to one side and add the orzo to the empty side, toasting it for 1–2 minutes.
- Mix in the tomato paste, diced tomatoes, oregano, and red pepper flakes.
- Pour in the beef broth and bring the mixture to a boil, then reduce heat and cover to simmer for 12–15 minutes.
- Check if the orzo is tender, adjust seasoning, and garnish with fresh herbs before serving hot.
