  1. Begin by bringing a large pot of salted water to a rapid boil. Add the rigatoni and cook until it reaches a texture just shy of al dente. This helps the pasta hold up when mixed with the sauce. Once cooked, remember to reserve about ½ cup of the pasta cooking water before draining the rest. This starchy water will help bind the sauce to the pasta.
  2. Meanwhile, in a large skillet, heat a tablespoon of olive oil over medium heat. Once hot, add the finely chopped onion and let it sauté for about 3 to 4 minutes, or until it becomes translucent. This step builds a flavor foundation for your dish. Then, add in the minced garlic, cooking it for an additional 30 seconds just until it’s fragrant.
