Description

This low-carb dish combines savory ground beef, zucchini, and melty cheese for a hearty yet healthy meal.


Ingredients

  • lbs zucchini, sliced into rounds, salted, and patted dry
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 8 oz mushrooms, diced
  • ½ tsp salt, divided
  • ½ tsp garlic powder, divided
  • ½ tsp onion powder, divided
  • 1 lb ground beef
  • ½ tsp paprika
  • 1 cup thick marinara sauce
  • 1½ cups shredded mozzarella cheese
  • 2 tsp Italian herb blend
  • 2 tbsp grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange the zucchini rounds on a baking sheet, sprinkle with salt, and let them rest for about 15 minutes to draw out excess moisture. Pat them dry with paper towels.
  2. Heat some olive oil in a skillet over medium heat. Add the diced onions and cook them until they begin to soften. Toss in the mushrooms and sauté for an additional 4–5 minutes. Season with half the salt, garlic powder, and onion powder.
  3. Add the ground beef and cook until browned, breaking it up with a spatula. Stir in the remaining salt, garlic powder, onion powder, and paprika.
  4. Combine the sautéed zucchini, onions, mushrooms, and cooked beef in a baking dish. Pour in the marinara sauce, stir in 1 cup of shredded mozzarella, and season with salt and pepper.
  5. Sprinkle with Parmesan cheese and bake for about 30 minutes until bubbly.
  6. Top with remaining mozzarella and return to the oven until melted. Let it rest before serving.

Notes

For a richer flavor, combine mozzarella with cheddar cheese.
