Ingredients

  • 1/4 cup coconut oil or unsalted butter, softened
  • 1/3 cup maple syrup or honey
  • 1/4 cup brown sugar or coconut sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins, chopped dates, or dark chocolate chips (optional)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C), and prepare a baking sheet lined with parchment paper.
  2. In a medium bowl, combine rolled oats, whole wheat flour, baking soda, cinnamon, and salt.
  3. In a larger bowl, cream together softened coconut oil and brown sugar until light and fluffy, then add maple syrup.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet, stirring gently.
  6. Fold in any optional add-ins like raisins or chocolate chips.
  7. Scoop rounded tablespoons of dough onto the baking sheet, spaced 2 inches apart.
  8. Bake for 10–12 minutes until edges are golden-brown.
  9. Cool briefly on the tray before transferring to a wire rack.
