- 2 medium zucchinis, sliced into thick half-moons
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1 teaspoon sugar
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon chopped green onions
- 1 teaspoon toasted sesame seeds
- pinch of red pepper flakes (optional)
Instructions
- Begin by washing your zucchinis thoroughly under running water. Once cleaned, slice the zucchinis into thick half-moon shapes, approximately half an inch in thickness.
- Place your non-stick skillet or cast-iron pan on the stove and turn the heat to medium-high. Add the vegetable oil and allow it to heat until it shimmers.
- Add the zucchini slices in a single layer and sear for about 2 to 3 minutes on one side until golden brown, then flip and sear for an additional 2 to 3 minutes.
- Push the zucchini to one side of the pan, add minced garlic and sesame oil in the cleared space, and sauté for about 15 seconds until fragrant.
- Add the soy sauce and sugar to the pan, tossing everything to coat the zucchinis thoroughly. Stir well for about a minute to let the flavors marry.
- Once the sauce has slightly thickened, remove from heat, toss gently, and sprinkle with chopped green onions, toasted sesame seeds, and red pepper flakes if desired.
- Transfer to a serving dish and enjoy warm.
Notes
For the best flavor, use fresh garlic and adjust the heat level as you prefer.
