  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract (for topping)
  • Fresh red currants or cranberries
  • Mini rosemary sprigs (for garnish)
  • Edible pearls or red sprinkles (optional)

Instructions

  1. Start by preheating your oven to 200°F (95°C). This low temperature is crucial for drying out the meringues slowly, ensuring they turn out crisp. While the oven heats, line a baking sheet with parchment paper to prevent sticking.
  2. In a clean mixing bowl, add the room temperature egg whites along with the cream of tartar. Using an electric mixer, begin beating the egg whites on medium speed until soft peaks start to form. Gradually add in the granulated sugar, mixing well until the mixture becomes thick and glossy, reaching stiff peaks.
  3. Once your meringue reaches stiff peaks, gently fold in the vanilla extract and a few drops of green gel food coloring.
  4. Prepare your piping bag fitted with a star tip. Fill it with the meringue mixture and start piping ring shapes onto your lined baking sheet.
  5. Carefully place your baking sheet in the preheated oven and bake the meringues for 1½ hours. Once baked, turn the oven off and leave the meringues inside for an additional hour to cool gradually.
  6. In a clean mixing bowl, add the heavy cream, powdered sugar, and half a teaspoon of vanilla extract. Whip together until soft peaks form.
  7. Once the meringue wreaths have cooled completely, pipe a generous swirl of whipped cream on top of each wreath.
  8. Finish off each wreath by decorating them with fresh berries, such as red currants or cranberries, and mini rosemary sprigs.
