Homemade blueberry pop tarts are a delicious and fun way to bring a little nostalgia into your kitchen.

- 2 ½ cups all-purpose flour
- 1 cup unsalted butter (cold, cubed)
- ½ teaspoon salt
- 6 tablespoons ice water
- 1 ½ cups blueberries (fresh or frozen)
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1 tablespoon blueberry puree or jam
Instructions
- Begin by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper, ensuring that it’s ready for your pop tarts once they’re assembled.
- In a large mixing bowl, combine the all-purpose flour and salt. Next, take the cold, cubed butter and cut it into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until a dough forms. Divide the dough into two disks, wrap them in plastic wrap, and refrigerate for at least 30 minutes.
- While your dough chills, prepare the blueberry filling by cooking blueberries, sugar, lemon juice, and cornstarch over medium heat until thickened. Allow it to cool.
- Once the dough has chilled, roll it out on a floured surface and cut it into rectangles.
- Assemble the pop tarts by placing filling on half of the rectangles, covering with the other half and sealing the edges.
- Brush the tops with a beaten egg and bake for about 22–25 minutes or until golden brown.
- Prepare the icing with powdered sugar, blueberry puree, and milk, then drizzle over cooled pop tarts.
Notes
Store any leftover pop tarts in an airtight container at room temperature for up to 3 days.
