- 4 cups granulated sugar

- 2 tablespoons lemon juice
- 1 packet powdered pectin (or as instructed on packaging)

- Start by thoroughly washing your limes to ensure they’re free from any dirt or wax. Once clean, zest your limes carefully, being cautious not to include the bitter white pith.
- Next, slice your limes in half and juice them, taking care to remove any seeds that may fall in. You should aim for about one cup of pure lime juice.
- In a large pot, combine your freshly squeezed lime juice, lime zest, lemon juice, water, granulated sugar, and powdered pectin. Stir the mixture well to ensure that the sugar dissolves completely.
- Place the pot over medium-high heat and bring the mixture to a rolling boil. Keep stirring frequently to prevent the bottom from scorching.
- Let the marmalade simmer for about 45 minutes to 1 hour. Stir occasionally to ensure even cooking.
- To determine if your marmalade is ready, do a simple test: spoon a small amount onto a cold plate.
- Once thickened, remove the pot from heat and let the marmalade cool slightly. Prepare sterilized jars by washing them in hot, soapy water.
