Ingredients

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 ounces) refried beans
  • 1 can (10 ounces) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Begin by preheating your oven to 375°F (190°C). While the oven warms up, spray two baking sheets with non-stick spray. Arrange three tortillas on each baking sheet, ensuring they are spaced out to allow for even baking. Place the sheets in the oven and bake the tortillas for about 3-5 minutes. Once they start to turn golden and crispy, flip them over and bake for an additional 2-5 minutes.
  2. While your tortillas are baking, heat a large skillet over medium-high heat. Add the lean ground beef to the skillet and cook it, crumbling the meat as it browns. This should take about 5-7 minutes. Once the beef is fully cooked, be sure to drain any excess grease.
  3. Once the beef is browned and drained, it’s time to infuse it with flavor. Sprinkle the taco seasoning over the beef, then pour in 1/2 cup of water. Stir everything together until the beef is evenly coated with the seasoning. Bring the mixture to a boil, then reduce the heat to medium-low and let it simmer for about 10 minutes.
  4. In a microwave-safe bowl, scoop out the refried beans, covering them with a damp paper towel to prevent them from drying out. Microwave the beans for about 1 minute or until heated through.
  5. Take one crispy tortilla and spread a thin layer of refried beans across its surface. Top the beans with approximately 1/3 of the seasoned beef mixture, distributing it evenly. Then place a second tortilla on top.
  6. On top of the second tortilla, spread about 3 tablespoons of enchilada sauce. Generously sprinkle shredded cheddar and pepper-jack cheese for that gooey goodness. Top it off with diced tomatoes, green onions, and sliced black olives.
  7. Once your pizzas are assembled, carefully place them back in the oven for about 5 minutes, or just until the cheese melts and starts to bubble.

Notes

Store leftover pizza in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave or oven.
