Ingredients

  • 1 ½ pounds fresh tomatillos, husked and rinsed
  • 12 jalapeños or serrano chiles (adjust to taste)
  • ½ medium white onion, cut into chunks
  • 2 garlic cloves, peeled
  • ½ cup fresh cilantro leaves (stems okay)
  • Juice of 1 lime (about 2 tbsp)
  • ½ tsp salt (plus more to taste)
  • Optional: splash of water if too thick

Instructions

  1. Begin by preparing the tomatillos. Remove the papery husks, and rinse them under warm water to eliminate the stickiness. Prepare your medium white onion by cutting it into manageable chunks, and peel your garlic cloves. Finally, depending on your heat preference, slice the jalapeños or serrano chiles, and remove the seeds for a milder taste.
  2. Preheat your broiler to high. Arrange the tomatillos, chopped onion, garlic cloves, and chiles on a foil-lined baking sheet. Position the sheet under the broiler and let the ingredients roast for 5 to 7 minutes, or until they exhibit a charred, blistered appearance. This roasting process develops a depth of flavor, bringing a natural sweetness to the tomatillos and a smoky touch that makes the salsa unforgettable.
  3. Once roasted, allow the mixture to cool slightly. Transfer all the roasted vegetables into a blender or food processor. Add the fresh cilantro and lime juice, and sprinkle in the salt. Blend until you reach your desired consistency, using a splash of water to thin if necessary. Taste and adjust the lime and salt levels according to your preference.
