  • 1/2 cup honey
  • 1/4 cup balsamic vinegar

  • 1/2 cup crumbled feta cheese
  • 1 tsp dried thyme or rosemary
  • Fresh parsley for garnish (optional)

Instructions

  1. Start by preheating your oven to 375°F (190°C), ensuring it reaches the right temperature for even cooking. While the oven heats, take the chicken breasts and season them generously with salt and black pepper on both sides.
  2. In a mixing bowl, combine the honey, balsamic vinegar, and dried thyme or rosemary. Whisk these ingredients together until you have a harmonious blend that will coat the chicken beautifully.
  3. Place the seasoned chicken breasts in the greased 9×13-inch baking dish. Carefully pour the honey-balsamic mixture over the chicken, ensuring it’s evenly distributed. Next, scatter the cranberries atop the chicken and sauce.
  4. Cover the baking dish with foil and insert it into the preheated oven. Bake for 20 minutes. After that, remove the foil and continue to bake for another 15–20 minutes until the chicken is fully cooked.
  5. Once the chicken is cooked through, sprinkle the crumbled feta cheese over the top, allowing it to melt slightly into the dish during the last few minutes of cooking.
  6. After removing the dish from the oven, let it cool for a couple of minutes. Finally, garnish with freshly chopped parsley and serve warm.
