Ingredients

  • 1 lb (450g) carrots, peeled & cut into chunks
  • 3 tbsp unsalted butter, melted
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the melted unsalted butter, honey, minced garlic, salt, and black pepper, mixing thoroughly.
  3. Add the carrot chunks to the bowl and toss to coat them in the glaze.
  4. Spread the coated carrot chunks in a single layer on a parchment-lined baking sheet and roast for 20–25 minutes, flipping halfway through.
  5. Transfer to a serving dish and sprinkle with chopped parsley before serving.

Notes

Ensure the carrots are cut uniform in size for even cooking. Leftovers can be stored in an airtight container in the fridge for up to three days.
