Ingredients

  • 1 lb (450 g) boneless, skinless chicken breast, diced
  • 2 tbsp olive oil
  • Zest and juice of 1 lime
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 cups cooked jasmine or basmati rice
  • 2 ripe avocados, diced
  • 1/4 cup cherry tomatoes, finely chopped
  • 2 tbsp fresh cilantro or parsley, chopped

Instructions

  1. Start by placing the diced chicken in a mixing bowl. Add the olive oil, lime zest, lime juice, honey, minced garlic, paprika, and season with salt and pepper. Gently toss the chicken pieces to ensure they are evenly coated in the marinade. Allow the chicken to marinate for at least 10-15 minutes.
  2. Heat a skillet over medium heat and add the marinated chicken pieces. Cook for about 6–8 minutes, stirring occasionally until it’s golden brown and fully cooked through.
  3. Prepare the rice in a separate pot or bowl if you haven’t done so already. If using leftover rice, simply reheat it and add a pinch of salt.
  4. In a small bowl, gently combine the diced avocados, finely chopped cherry tomatoes, and fresh herbs.
  5. Using a ring mold or a small cup, begin layering your ingredients: first, a layer of rice, followed by the cooked honey lime chicken, then the avocado tomato mixture. Remove the mold to reveal the stack.

Notes

Ensure not to overcrowd the pan when cooking the chicken to achieve a good sear.
