- 5 cups (1.5 pounds) fresh or frozen huckleberries
- 1 cup (200 grams) granulated sugar
- ¼ cup (48 grams) quick-cooking tapioca
- 2 tablespoons (30 ml) freshly squeezed orange juice
- 1 teaspoon (5 ml) orange zest
- 1 double-pie crust recipe (store-bought or homemade)
- 1 egg (for egg wash)
- 1 tablespoon (15 ml) water
Instructions
- Start by preheating your oven to 425°F (220°C) to get it ready for baking. In a large mixing bowl, carefully combine 5 cups of huckleberries with 1 cup of granulated sugar, ¼ cup of quick-cooking tapioca, 2 tablespoons of freshly squeezed orange juice, and 1 teaspoon of orange zest. Ensure everything is mixed well, then let it rest for about 15-20 minutes.
- While the filling is resting, roll out one portion of your pie crust and place it gently into a 9-inch pie plate. Ensure it covers the bottom completely. After pouring the huckleberry mixture into the prepared crust, roll out the second crust. You can cut this crust into strips to create a beautiful lattice top, or if you prefer a simpler approach, you can leave it whole with slits for venting.
- Once your huckleberry filling is in the crust, it’s time to assemble. If you’re going for the lattice option, carefully arrange the strips over the pie in a crisscross pattern, pressing them at the edges to seal. Alternatively, if you’re using the whole crust, place it on top and crimp the edges to ensure a tight seal. To achieve that golden, glossy finish, beat one egg with 1 tablespoon of water and brush this mixture over the top crust.
- Before baking, place your assembled pie in the refrigerator for about 30 minutes. After chilling, bake the pie in your preheated oven for 20 minutes at 425°F (220°C). After this initial burst of heat, reduce the temperature to 375°F (190°C) and continue to bake for another 30-35 minutes, or until the crust turns a beautiful golden brown and the filling starts to bubble.
