- Begin by rinsing the glutinous rice under cold water. It’s important to do this several times—3 to 4 washes should suffice—until the water runs clear. This step removes excess starch and helps result in the best texture for your sticky rice. Make sure to drain the rice well before cooking to avoid unwanted excess water.
- Next, place the rinsed rice into the Instant Pot. Add 2 1/2 cups of water and 1/2 teaspoon of salt to the rice, then stir to combine. Given that the Instant Pot cooks under pressure, these measurements will ensure that the rice cooks evenly and has the right moisture content.
- Close the lid of your Instant Pot securely and set it to Manual mode (Pressure Cook) on high pressure. Adjust the timer to 12 minutes—this is the optimal cooking time for sticky rice. Once the timer goes off, allow a natural release for about 10 minutes; this allows the rice to finish cooking and absorb any leftover moisture. Follow this with a quick release to vent any remaining steam.
