- Start by preparing the marinade that will elevate the flavor of the chicken. In a medium-sized bowl, combine the olive oil, freshly squeezed lemon juice, lemon zest, minced garlic, Italian seasoning, salt, and black pepper. Use a whisk to blend all the ingredients until they are well mixed.
- Next, it’s time to marinate the chicken. Place the chicken breasts into a zip-top bag or a shallow dish. Pour the prepared marinade over the chicken, ensuring each piece is fully coated. Seal the bag or cover the dish with plastic wrap, and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.
- After marinating, preheat a skillet over medium-high heat and add a splash of olive oil. Once the pan is hot, carefully add the marinated chicken breasts, searing them for about 4–5 minutes on each side. You’ll know they are done when they turn golden brown and reach an internal temperature of 165 degrees Fahrenheit.
- Once the chicken is fully cooked, transfer it to a serving plate. To enhance the lemony flavor, give the chicken a light squeeze of fresh lemon juice just before serving.
