Description

This Italian-Style Giardiniera Beef Roast is an exceptional addition to your weeknight dinner repertoire.

Ingredients

Scale
  • Sauce:
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons water
  • 2 teaspoons light brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon crushed red pepper flakes
  • Beef:
  • 1 pound lean ground beef
  • 1/4 cup finely chopped yellow onion
  • 2 garlic cloves, minced
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon neutral oil
  • Bowls & Toppings:
  • 3 cups cooked brown rice
  • 1 small cucumber, thinly sliced
  • 2 tablespoons Korean chili paste
  • 1/2 tablespoon sesame seeds
  • 2 scallions, thinly sliced
  • 1/4 cup crispy fried onions

Instructions

  1. In a small bowl, combine the soy sauce, water, brown sugar, sesame oil, and crushed red pepper flakes. Whisk them together until they blend to create a deliciously balanced sauce that will elevate your beef’s flavor. Set this mixture aside while you cook the beef.
  2. Heat a large skillet over medium-high heat, adding the neutral oil to coat the bottom of the pan. When the oil is hot, add the lean ground beef. Cook for approximately 5 minutes, breaking it apart with a spoon until it turns browned and loses its pink color.
  3. Once the beef is fully browned, stir in the finely chopped onion, minced garlic, and freshly grated ginger. Cook these ingredients together for about a minute.
  4. Pour the prepared sauce over the beef mixture. Reduce the heat to low, covering the skillet to let it simmer for about 10 minutes.
  5. To make serving easy, divide the cooked brown rice evenly among four bowls, aiming for about 3/4 cup of rice per bowl. Carefully spoon the flavorful beef mixture over the top of the rice.

Notes

To maintain the best texture when reheating, store the beef mixture separately from the rice and toppings.
