Ingredients

  • 2 ½ lbs bone-in chicken, cut into chunks
  • 1 tbsp browning sauce
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 2 scallions, chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 sprig fresh thyme or 1 tsp dried thyme
  • 1 tsp allspice
  • 1 tsp paprika
  • 1 Scotch bonnet pepper
  • 2 tbsp vegetable oil
  • 2 tbsp brown sugar
  • 2 cups water or chicken broth
  • 1 tomato, chopped
  • 1 tbsp ketchup (optional)
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Start by cleaning your chicken pieces with lime juice. Rinse the chicken under cold water, and then pat it dry with paper towels.
  2. In a large mixing bowl, combine the cleaned chicken with browning sauce, thyme, minced garlic, grated ginger, chopped scallions, allspice, paprika, salt, and pepper. Toss everything together. Add in the sliced onions, bell pepper, and chopped tomato.
  3. In a heavy-bottomed pot, heat the vegetable oil over medium heat. Add the brown sugar and let it melt into a caramel color. Add the marinated chicken pieces and brown them on all sides.
  4. After browning, add the remaining marinade and the Scotch bonnet pepper along with your choice of water or chicken broth. Bring to a gentle simmer and cover. Cook on low heat for 40 to 50 minutes.
  5. When cooking is complete, remove the Scotch bonnet pepper. Stir in the ketchup if using. Taste and adjust the seasoning as desired.

Notes

For best results, marinate the chicken overnight to enhance the flavors. Watch the sugar carefully while browning; it should be dark brown but not burnt.
