Ingredients

  • 2 ½ cups bread flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 ¼ teaspoons instant yeast
  • ¾ cup warm milk
  • 1 egg
  • 2 tablespoons unsalted butter
  • 1 tablespoon milk
  • 1 egg yolk
  • 1 tablespoon sesame seeds
  • 1 tablespoon vegetable oil
  • ½ medium onion, finely diced
  • 1 small carrot, diced
  • 1 small potato, diced
  • 100 grams ground beef or meat of choice
  • 1 cup water
  • 1 cube Japanese curry roux
  • 1 teaspoon soy sauce
  • Salt and pepper to taste

Instructions

  1. Begin by heating the vegetable oil in a frying pan over medium heat. Once hot, add the finely diced onions and sauté until they become translucent and soft, releasing their sweet aroma. This should take about 5 minutes. Next, introduce the diced carrots and potatoes to the pan, allowing them to cook for another 5 minutes.
  2. With the vegetables cooked, it’s time to add your choice of ground meat. Stir well to break it up, cooking until it’s browned evenly.
  3. After the meat has browned, pour in the cup of water, stirring to combine. Allow this to simmer for 10-15 minutes.
  4. Stir in the Japanese curry roux and mix until the roux dissolves completely, thickening the mixture into a savory filling.
  5. In a separate mixing bowl, combine warm milk, sugar, and instant yeast. This mixture should sit for about 5-10 minutes until it becomes foamy.
  6. Add the egg, flour, and salt to the yeast mixture. Mix until all the ingredients come together into a sticky dough.
  7. Knead the dough on a floured surface for about 10 minutes.
  8. After kneading, place the dough in a greased bowl, cover it, and allow it to rise for about 1 hour.
  9. Once the dough has risen, punch it down to release the air. Divide it into 10-12 equal pieces and flatten each piece into a disc shape.
  10. Take 1-2 tablespoons of the cooled curry filling and place it in the center of each disc. Pinch the edges together to seal.
  11. Let the filled buns rest for 20-30 minutes.
  12. If frying, heat oil to 350°F (175°C) and fry until golden brown. If baking, preheat the oven to 375°F (190°C), brush with egg wash, and bake for 15-18 minutes.

Notes

These buns can be fried for a crispy finish or baked for a healthier alternative.
