- 2 ½ cups bread flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 ¼ teaspoons instant yeast
- ¾ cup warm milk
- 1 egg
- 2 tablespoons unsalted butter
- 1 tablespoon milk
- 1 egg yolk
- 1 tablespoon sesame seeds
- 1 tablespoon vegetable oil
- ½ medium onion, finely diced
- 1 small carrot, diced
- 1 small potato, diced
- 100 grams ground beef or meat of choice
- 1 cup water
- 1 cube Japanese curry roux
- 1 teaspoon soy sauce
- Salt and pepper to taste
Instructions
- Begin by heating the vegetable oil in a frying pan over medium heat. Once hot, add the finely diced onions and sauté until they become translucent and soft, releasing their sweet aroma. This should take about 5 minutes. Next, introduce the diced carrots and potatoes to the pan, allowing them to cook for another 5 minutes.
- With the vegetables cooked, it’s time to add your choice of ground meat. Stir well to break it up, cooking until it’s browned evenly.
- After the meat has browned, pour in the cup of water, stirring to combine. Allow this to simmer for 10-15 minutes.
- Stir in the Japanese curry roux and mix until the roux dissolves completely, thickening the mixture into a savory filling.
- In a separate mixing bowl, combine warm milk, sugar, and instant yeast. This mixture should sit for about 5-10 minutes until it becomes foamy.
- Add the egg, flour, and salt to the yeast mixture. Mix until all the ingredients come together into a sticky dough.
- Knead the dough on a floured surface for about 10 minutes.
- After kneading, place the dough in a greased bowl, cover it, and allow it to rise for about 1 hour.
- Once the dough has risen, punch it down to release the air. Divide it into 10-12 equal pieces and flatten each piece into a disc shape.
- Take 1-2 tablespoons of the cooled curry filling and place it in the center of each disc. Pinch the edges together to seal.
- Let the filled buns rest for 20-30 minutes.
- If frying, heat oil to 350°F (175°C) and fry until golden brown. If baking, preheat the oven to 375°F (190°C), brush with egg wash, and bake for 15-18 minutes.
Notes
These buns can be fried for a crispy finish or baked for a healthier alternative.
