Delicious and satisfying lamb gyro bowls with a dreamy creamy sauce packed with Mediterranean flavors.

- 1 lb ground lamb
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 small yellow onion, finely chopped
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp ground cinnamon
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- Juice of half a lemon
- 1 cup long grain white rice
- 2 cups water or broth
- Pinch of salt
- 1 cup Greek yogurt
- 1 clove garlic, finely grated or minced
- 1 tbsp lemon juice
- 2 tbsp chopped fresh dill
- 1 tbsp chopped fresh parsley
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
Instructions
- Start by rinsing the long grain white rice under cold water until the water runs clear. In a medium saucepan, bring 2 cups of water or broth to a boil along with a pinch of salt. Once boiling, add the rinsed rice, cover the saucepan with a lid, and reduce the heat to low. Let it simmer for 15 to 18 minutes, or until the liquid is absorbed. After cooking, remove from heat and allow the rice to sit for about 5 minutes, then fluff it up gently with a fork.
- In a small bowl, mix together the Greek yogurt, finely grated garlic, lemon juice, chopped dill, chopped parsley, and olive oil. Season this mixture with salt and pepper. Chill the sauce in the refrigerator.
- Heat a tablespoon of olive oil in a skillet over medium heat. Add the finely chopped yellow onion and sauté until soft. Then, add the minced garlic, stirring for an additional minute. Add the ground lamb, breaking it up, and cook until browned. Season with ground cumin, dried oregano, ground cinnamon, smoked paprika, lemon juice, salt, and black pepper. Allow this mixture to simmer for about 5 minutes.
- Start with a scoop of rice in each bowl. Layer on the spiced lamb, followed by the cherry tomatoes and red onion. Sprinkle feta on top.
- Drizzle the dreamy creamy sauce over the assembled bowls and finish with a sprinkle of fresh parsley. Serve immediately or store components separately.
Notes
Make sure not to overcook the lamb as it can become dry. Store each component separately to maintain freshness.
