  • 2 tbsp cider vinegar
  • 1 tbsp granulated sweetener
  • Meatballs
  • 500 g lean lamb mince
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 courgette (zucchini), grated
  • 1 ½ tbsp fresh mint, chopped
  • Salt and black pepper to taste
  • Gravy
  • 1 onion, chopped
  • 2 cups (480 ml) beef stock (or lamb stock, if available)
  • Pinch onion powder
  • Pinch garlic powder
  • 1 tbsp tomato paste
  • Pinch dried rosemary
  • 1 tbsp cornstarch

Instructions

  1. Prepare the Mint Sauce: In a small mixing bowl, combine the finely chopped mint leaves, cider vinegar, and your chosen sweetener. Let the mixture sit for at least five hours—this allows the flavors to meld beautifully.
  2. Create the Meatball Mixture: In a frying pan, heat a little cooking spray over medium heat. Add the diced onion and sauté until they become golden and soft. Stir in the minced garlic and grated courgette and cook for an additional two minutes. Allow this mixture to cool slightly before adding it to a large bowl. In the bowl, combine the cooked vegetable mixture with the lamb mince, fresh mint, and seasonings. Mix just until combined and shape into twelve meatballs.
  3. Bake the Meatballs: Preheat your oven to 200°C (or 400°F). Line a baking tray with parchment paper and arrange the meatballs. Bake for about 15 minutes or until browned and cooked through.
  4. Make the Gravy: Using the same frying pan, add cooking spray and toss in the chopped onion, caramelizing until deep golden brown. Stir in tomato paste, onion powder, and garlic powder, then add the beef or lamb stock. Simmer for about 15 minutes. Blend the sauce until smooth, stir in the mint sauce and dried rosemary, and thicken with cornstarch mixed with water.
  5. Combine and Finish the Dish: Add the baked meatballs to the gravy and cook together for a few minutes. Adjust seasoning to taste.

Let the mint sauce sit for longer if possible, as this enhances the flavors even further.
