These soft, spiced cupcakes, infused with the rich flavors of espresso and topped with a creamy espresso frosting, make for an irresistible dessert that is sure to please coffee lovers and sweet-toothed individuals alike.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • ½ cup brewed espresso or strong coffee, cooled
  • ¼ cup whole milk
  • ½ teaspoon ground cinnamon
  • 1 cup unsalted butter (for frosting)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 12 tablespoons espresso or strong coffee (for frosting)

Instructions

  1. Begin your baking journey by preheating your oven to 350°F (175°C). While the oven warms up, line a 12-cup muffin tin with cupcake liners.
  2. In a medium-sized bowl, combine the all-purpose flour, baking powder, ground cinnamon, and salt. Whisk them together until well mixed.
  3. In a separate larger bowl, cream the softened unsalted butter, granulated sugar, and brown sugar using an electric mixer until the mixture is light and fluffy. Beat in the eggs one at a time, allowing each to fully combine before adding the next.
  4. Gradually add the dry ingredient mixture to the wet mixture, alternating with the whole milk. Stir gently until just combined.
  5. Using an ice cream scoop or a ladle, carefully divide the batter evenly among the lined cupcake cups, filling each about ¾ full.
  6. Place the cupcake tray in the preheated oven and bake for 18–20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  7. For the luscious frosting, beat the unsalted butter until it’s fluffy and creamy. Gradually add in the powdered sugar.
  8. Once the cupcakes are completely cool, use a piping bag or a knife to gently swirl the espresso frosting onto each cupcake.

Notes

Ensure the brewed espresso is fully cooled before adding to the batter and frosting. Store frosted cupcakes in the refrigerator for up to 3 days to maintain freshness.
