  • 2 tablespoons ketchup
  • 1 tablespoon grated onion
  • 1 tablespoon sweet pickle relish
  • 1/8 teaspoon smoked paprika
  • 6 slices rye or pumpernickel bread, cubed
  • 1 lb thin sliced corned beef, cut into bite-size pieces
  • 16 ounces sauerkraut, well drained
  • 2 cups shredded Swiss cheese

Instructions

  1. Start your culinary journey by preheating your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mayonnaise, ketchup, grated onion, sweet pickle relish, and smoked paprika. Whisk them together until smooth and well-blended.
  3. Lightly coat your 9×13-inch casserole dish with nonstick spray and place the cubed rye or pumpernickel bread in an even layer.
  4. Evenly distribute the chopped corned beef over the bed of bread.
  5. Drizzle the homemade Thousand Island dressing evenly over the corned beef layer.
  6. Next, spread the well-drained sauerkraut over the top of the corned beef.
  7. Finish off your casserole by sprinkling the shredded Swiss cheese evenly across the top.
  8. Place your casserole in the preheated oven and bake it uncovered for about 25 minutes.
  9. Once baking is complete, allow the casserole to cool slightly before slicing it into squares.
