Ingredients

  • 2 cups leftover mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1/4 cup flour
  • 1 egg
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 cup breadcrumbs
  • Olive oil for frying

Instructions

  1. In your large mixing bowl, combine the mashed potatoes, cheddar cheese, bacon, green onions, flour, egg, garlic powder, paprika, salt, and pepper. Stir and mix until all components are uniformly incorporated.
  2. Using your hands, take the mixture and shape it into small patties about 2-3 inches in diameter.
  3. Place your breadcrumbs in a shallow dish and gently press each patty into the breadcrumbs, making sure it’s fully coated.
  4. Heat olive oil in a large skillet over medium heat. Fry them for about 3-4 minutes on each side until they’re golden brown and crispy.
  5. Remove the cooked patties from the skillet and place them on paper towels.

Notes

For best results, use cold mashed potatoes and ensure even frying temperature.
