  • 1/2 cup lemon curd
  • 1/2 cup cream cheese frosting
  • 12 oz white chocolate or candy melts
  • 1/2 cup graham cracker crumbs
  • 2 egg whites
  • 1/2 cup granulated sugar
  • 1/4 tsp cream of tartar
  • 1/2 tsp vanilla extract
  • Lollipop sticks

Instructions

  1. Start by preparing the lemon cake according to the instructions on the package. Be sure to follow the specifics, such as oven temperature and baking time, to ensure your cake bakes perfectly moist and fluffy. Once baked, allow the cake to cool completely.
  2. Once your cake has cooled, crumble it into fine crumbs in a large mixing bowl. This should be done carefully to ensure no large chunks remain, as they can cause the cake balls to fall apart during the coating. After crumbling, add in the lemon curd and cream cheese frosting. Mix everything together until well combined.
  3. With your cake mixture ready, start rolling it into 1-inch balls. Place the formed cake balls on a baking sheet lined with parchment paper. Insert lollipop sticks into each ball. Once all the cake balls are formed, freeze them for about 30 minutes, or until they are firm.
  4. While the cake balls firm up in the freezer, melt your white chocolate or candy melts in a microwave-safe bowl or over a double boiler. Once melted, take each cake pop and dip it into the chocolate, ensuring it’s completely covered. Tap off any excess chocolate.
  5. To prepare the meringue, start by beating the egg whites along with the cream of tartar until soft peaks form. Gradually sprinkle in the granulated sugar. Mix in the vanilla extract for added flavor and then transfer the meringue to a piping bag.
  6. Pipe the prepared meringue onto each cake pop with your piping bag. If you want that toasted look, use a kitchen torch to lightly toast the meringue.
