- 1 pound shrimp, peeled and deveined
- 1 cup orzo
- 2 tablespoons olive oil
- 1 lemon, zest and juice
- 3 cloves garlic, minced
- ¼ cup fresh parsley, chopped
- ¼ teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Begin by bringing a large pot of salted water to a boil. Once it reaches a rolling boil, add the orzo. Follow the package instructions for cooking time, typically around 8-10 minutes until the pasta is al dente. Stir occasionally to prevent sticking. Once cooked, be sure to drain the orzo and set it aside for later.
- While the orzo is cooking, heat the olive oil in a large skillet over medium heat. Season the shrimp with salt, pepper, and red pepper flakes if you’re using them for an added kick. Add the shrimp to the skillet one by one, ensuring they are not overcrowded. Sauté for about 2-3 minutes on each side or until they turn pink and opaque. Once they are cooked through, remove them from the heat and transfer them to a plate, keeping them warm.
- In the same skillet where you cooked the shrimp, add the minced garlic and sauté for approximately 1 minute, until fragrant but not browned. Next, add the drained orzo to the skillet along with the freshly grated lemon zest and lemon juice. Stir everything together gently to combine, allowing the orzo to soak up the seasonings for 1-2 minutes. Finally, return the sautéed shrimp to the skillet, tossing everything together until fully mixed and heated through.
Notes
Make sure to use fresh shrimp for the best flavor. Frozen shrimp can be used, but ensure they are fully thawed before cooking.
