- 2 cups finely chopped broccoli florets
- 1 English cucumber, sliced
- 1/2 cup pine nuts
- 1/3 cup feta cheese, crumbled
- 1/4 cup chopped green onions
- 2 tbsp mayonnaise
- 1/3 cup plain Greek yogurt
- Juice from 1/2 a lime
- 1 tsp Dijon mustard
- 2 tsp minced garlic
Instructions
- Combine broccoli, cucumber, feta, green onions, and pine nuts in a large bowl.
- Whisk Greek yogurt, mayonnaise, lime juice, Dijon mustard, and garlic in a separate bowl to make the dressing.
- Pour dressing over vegetables, mix well, and chill for 15 minutes before serving.
Notes
Feel free to add grilled chicken or bacon for extra protein. The salad can be made ahead and chilled to enhance flavors.
