- 120 ml white wine
- 25 g sugar
- 1 tsp peeled and minced fresh ginger
- Juice of 2 fresh limes
- 60 ml heavy cream
- 115 g unsalted butter, cut into small pieces

- 6 Mahi Mahi fillets, 170 g each (approx. 1.02 kg total)
- 30 ml olive oil
- ½ tsp Italian seasoning (optional)

- Start by placing a small saucepan over medium heat. Add the chopped mango, white wine, sugar, minced ginger, and fresh lime juice into the pan. Allow them to simmer for about 8 minutes. This process will help the flavors meld together and create a syrupy consistency. Stir occasionally to ensure nothing sticks to the bottom of the pan. Once the mixture has thickened nicely, remove it from the heat.
- After removing the saucepan from the heat, add the heavy cream to your mango mixture. Stir well to combine everything thoroughly. Then, pour the contents into a blender. Blend until the sauce is smooth and creamy. This step adds a nice texture and ensures an even distribution of the flavors. Once blended, return the sauce to the saucepan and let it simmer on low heat for an additional 10 minutes. This will allow the sauce to thicken even further, bringing it to the perfect consistency.
- As the sauce simmers, gradually stir in the small pieces of butter one at a time. Make sure to fully incorporate each piece before adding the next. This technique is crucial since it helps to create a rich and velvety sauce. It’s important to keep the mixture from boiling to avoid breaking it, which would separate the butter from the sauce. Continuously stirring at a low temperature will ensure a beautifully emulsified sauce.
- While your sauce is thickening, it’s time to prepare the Mahi Mahi. Preheat your grill or grill pan to a medium-high temperature. Pat the fillets dry with a paper towel, then brush both sides with olive oil. Season them generously with salt, pepper, and if desired, a touch of Italian seasoning for added flavor. Place the seasoned fillets on the grill and cook for about 4 to 5 minutes on the first side. Flip them carefully using a spatula and continue cooking for an additional 3 to 4 minutes or until the fish is opaque and cooked thoroughly.
