- 1½ cups pitted & stuffed green olives
- ½ cup olive oil
- 2–3 tbsp red or white wine vinegar
- 1 garlic clove, finely grated
- Zest of 1 small lemon
- 1 tsp dried Italian seasoning
- Fresh herbs (thyme, rosemary, oregano, basil, or parsley)
- Salt and pepper to taste
- Chopped pistachios (optional, for garnish)
Instructions
- To kick things off, take a large mixing bowl and combine the olive oil, wine vinegar, finely grated garlic, lemon zest, dried Italian seasoning, and your choice of fresh herbs. Season the mixture with salt and pepper to taste. This marinade is the flavor base for your dish, so whisk it well to ensure all the ingredients are evenly blended.
- Once your marinade is ready, it’s time to add the star ingredients! Gently fold in the drained artichokes, mini mozzarella balls, and olives into the marinade. Take care to toss everything delicately, ensuring that each ingredient is nicely coated in the herby marinade without breaking up the mozzarella or artichokes.
- After thoroughly combining, allow the mixture to sit at room temperature for at least 30 minutes to let the flavors meld together beautifully.
