- 1 ¼ cups heavy cream

- 1 cup roughly chopped fresh spinach
- 5 tbsp all-purpose flour
- 4 tbsp unsalted butter
- 1 tbsp minced garlic or garlic paste
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- 1 tsp black pepper
- ¼ tsp smoked paprika
- 1 (11.36 oz) box Red Lobster Cheddar Bay Biscuit Mix
- ¾ cup milk
- ½ cup shredded mild cheddar cheese
- ¼ cup melted butter
- 1 seasoning pouch (from the biscuit mix box)
Instructions
- Begin by seasoning your chicken with onion powder, salt, pepper, smoked paprika, and a drizzle of the fragrant oil from the sun-dried tomato jar. Heat olive oil in a large skillet over medium-high heat and sear the chicken for several minutes on each side until golden and fragrant. Once seared, remove the chicken from the pan, chop it into bite-sized pieces, and set it aside.
- In the same skillet, add your onions, sautéing them until they become soft and translucent. Introduce the diced potatoes and stir them in, cooking for a few minutes until they start to soften. Pour in the white wine, using it to deglaze the pan. Once the wine reduces, add butter, melt it, then incorporate the flour. Start adding the chicken broth gradually, stirring continuously. When it reaches a desirable consistency, return the chicken, add sun-dried tomatoes, cream, garlic, herbs, and seasonings. Fold in fresh spinach, and promptly remove from heat.
- In a sizable mixing bowl, combine the dry Red Lobster biscuit mix with shredded cheddar cheese and milk. Gently incorporate the ingredients using a fork.
- Prepare the garlicky butter sauce by mixing melted butter with the sachet of garlic herb seasoning from the biscuit mix box.
- Preheat your oven to 425°F (220°C). Distribute the chicken filling among the ramekins. Atop each helping of filling, place spoonfuls of the prepared biscuit dough. Arrange the ramekins on a baking tray and bake them for about 14 to 16 minutes. Brush the tops with the prepared garlic herb butter. Serve hot.
Notes
When cooking wine-based gravy, the alcohol evaporates leaving behind a deeper flavor profile. If preferred, water can replace the wine for a milder taste.
