- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 1/4 cup milk
- 1 egg
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- 2 cups mashed potatoes
- 1 tbsp butter (optional)
Instructions
- Start by preheating your oven to 375°F (190°C). As the oven heats, mix the ground beef, breadcrumbs, Parmesan, chopped onions, milk, egg, Worcestershire sauce, and a pinch of salt and pepper in a large bowl. Stir thoroughly until the mixture is evenly combined, ensuring each ingredient is incorporated.
- Lightly grease a muffin tin to prevent sticking, then portion the meat mixture evenly into each cup, filling about two-thirds full. Press down gently to form the meat mixture into each cupcake. Bake in the preheated oven for 20-25 minutes, or until fully cooked and browned on the top.
- While the meatloaf cupcakes are baking, prepare your mashed potatoes. If using freshly boiled potatoes, mash them with butter, a sprinkle of salt, and pepper until they reach a smooth consistency. Once the meatloaf is ready, and after it has cooled down slightly, top each meatloaf cupcake generously with mashed potatoes, mimicking the look of frosted cupcakes.
Notes
Ensure meat mixture is not overpacked in muffin cups for even cooking. Parmesan can be substituted with cheddar for a different taste.
