  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup cooked quinoa or couscous
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup sliced Kalamata olives
  • Fresh chopped parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. In a medium-sized bowl, combine the olive oil, dried oregano, garlic powder, paprika, salt, and black pepper. Whisk together to create a marinade.
  2. Marinate the chicken breasts in the mixture for about 10 minutes.
  3. Prepare the quinoa or couscous according to package instructions and set aside.
  4. Heat a grill or skillet over medium-high heat and cook the marinated chicken breasts for 6 to 8 minutes on each side, ensuring they reach an internal temperature of 165°F (75°C).
  5. Allow the chicken to rest for a couple of minutes, then slice into strips.
  6. Assemble bowls with cooked quinoa or couscous at the bottom, followed by sliced chicken, cherry tomatoes, diced cucumber, and red onion.
  7. Top each bowl with crumbled feta cheese and olives, and sprinkle with parsley and serve with lemon wedges.
