Ingredients

  • ¾ cup olive oil
  • 2 tbsp balsamic vinegar
  • ½ cup grated Parmesan cheese
  • 2 tbsp sun-dried tomatoes, finely chopped
  • 1 tbsp Kalamata olives, finely chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp thyme leaves
  • 3 garlic cloves, crushed
  • 2 tsp chili flakes
  • 1 tsp sumac
  • Zest of 1 lemon
  • 1 tsp flaky sea salt (adjust to taste)

Instructions

  1. Start by placing the olive oil, balsamic vinegar, grated Parmesan, sun-dried tomatoes, and Kalamata olives in your prepared bowl. Add the chopped rosemary, thyme leaves, and crushed garlic. Sprinkle in the chili flakes, sumac, lemon zest, and a pinch of flaky sea salt.
  2. With your spoon or small whisk at the ready, thoroughly mix all the ingredients until they’re well combined. Taste the mixture to check if more salt is needed, and adjust as necessary.
  3. Once your dip is well mixed, transfer it to a serving dish of your choice. Serve it alongside warm focaccia, crusty bread, or an assortment of veggie sticks for a delightful snack or appetizer.

Notes

For a vegan version, omit the Parmesan cheese and substitute nutritional yeast for a cheesy flavor. The dip can be made a few hours in advance.
