- 1 cup chopped fresh spinach
- ½ cup shredded mozzarella cheese
- ½ cup crumbled feta cheese

- ¼ tsp black pepper
- 1 tbsp olive oil (for cooking)
Instructions
- Prepare the Filling: In a medium-sized bowl, mix the chopped spinach, shredded mozzarella cheese, crumbled feta cheese, diced tomato, thinly sliced red onion, and black pepper.
- Assemble the Quesadillas: Spread about a quarter of the filling over half of a flour tortilla. Fold over to create a half-moon shape. Repeat with remaining tortillas and filling.
- Cook the Quesadillas: Heat olive oil in a skillet over medium heat. Cook each quesadilla for 3 to 4 minutes on each side until golden and the cheese has melted.
- Serve and Enjoy: Cut into wedges and serve warm.
Notes
Make sure the skillet is adequately heated before placing the quesadillas in, ensuring they cook evenly. Keep cooked quesadillas warm in an oven set to low heat if making a large batch.
