Instructions
- Start by rinsing your russet potatoes under cold water to remove any dirt. Afterward, pierce each potato several times with a fork; this step is crucial!
- Place the prepared potatoes in your microwave-safe bowl. Set your microwave on high and cook for 8 to 10 minutes.
- When the potatoes are ready, carefully remove the bowl from the microwave and cut the potatoes in half. Fluff the insides gently using a fork.
- Layer in the black beans and sprinkle the shredded cheddar cheese generously over the top. Return the bowl to the microwave for an additional 1 to 2 minutes until the cheese melts.
- Drizzle the cheese sauce over the top, followed by the diced tomatoes, sliced green onions, and chopped cilantro. Add black pepper and a squeeze of lime over it all.
