  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 tablespoons granulated sugar

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream
  • For the Brûlée Topping:
  • ¼ cup granulated sugar

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium-sized bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press this mixture into the bottom of each cupcake liner and bake for 5 minutes.
  3. In a larger bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, then stir in the vanilla and heavy cream.
  4. Pour the cheesecake batter over the crusts and bake for 18-20 minutes.
  5. Let the cheesecakes cool, then refrigerate for at least 2 hours.
  6. Sprinkle sugar over each cheesecake and caramelize with a kitchen torch before serving.
