- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup heavy cream
- For the Brûlée Topping:
- ¼ cup granulated sugar
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium-sized bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press this mixture into the bottom of each cupcake liner and bake for 5 minutes.
- In a larger bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, then stir in the vanilla and heavy cream.
- Pour the cheesecake batter over the crusts and bake for 18-20 minutes.
- Let the cheesecakes cool, then refrigerate for at least 2 hours.
- Sprinkle sugar over each cheesecake and caramelize with a kitchen torch before serving.

Chilling the cheesecakes overnight is highly recommended for the best flavor and overall texture.
