Instructions
- Begin by preheating your oven to 400°F (200°C). Make sure to lightly grease a muffin tin with non-stick spray or butter to prevent sticking.
- Next, gather your ingredients and place them in a blender. Combine the all-purpose flour, milk, eggs, sugar, vanilla extract, and salt. Blend the mixture on high until it is completely smooth and well blended.
- Once your batter is ready, carefully pour it into the prepared muffin tin. Fill each cup about halfway to allow space for the pancakes to puff up as they bake.
- Now, you’re ready to bake! Place the muffin tin in the preheated oven and allow the mini pancakes to bake for approximately 12 to 15 minutes.
- Once they are baked to perfection, remove the muffin tin from the oven carefully and dust the mini pancakes with powdered sugar while they are still warm.
- Finally, serve the mini pancakes immediately with fresh lemon wedges on the side.
