Instructions

  1. Begin by preheating your oven to 400°F (200°C). Make sure to lightly grease a muffin tin with non-stick spray or butter to prevent sticking.
  2. Next, gather your ingredients and place them in a blender. Combine the all-purpose flour, milk, eggs, sugar, vanilla extract, and salt. Blend the mixture on high until it is completely smooth and well blended.
  3. Once your batter is ready, carefully pour it into the prepared muffin tin. Fill each cup about halfway to allow space for the pancakes to puff up as they bake.
  4. Now, you’re ready to bake! Place the muffin tin in the preheated oven and allow the mini pancakes to bake for approximately 12 to 15 minutes.
  5. Once they are baked to perfection, remove the muffin tin from the oven carefully and dust the mini pancakes with powdered sugar while they are still warm.
