  • 1/2 cup milk chocolate chips
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Whipped cream, for garnish
  • Whole pecans, for topping

Instructions

  1. Start by heating a skillet over medium-low heat. Add the shredded coconut and chopped pecans, stirring gently. Keep an eye on them, as they will become fragrant and golden in just a few minutes. Once toasted, remove the skillet from the heat and set aside to cool slightly.
  2. In a small saucepan, pour in the sweetened condensed milk and warm it over low heat. Stir frequently to avoid boiling it. As the milk thickens slightly, take half of the toasted coconut and pecans and mix them into the saucepan. Spread this mixture evenly across the bottom of your prepared graham cracker crust.
  3. In a microwave-safe bowl, combine the semi-sweet and milk chocolate chips along with the heavy cream. Heat in the microwave in 30-second intervals, stirring after each interval until you achieve a smooth and glossy ganache. Stir in the vanilla extract and salt, then pour over the coconut-pecan layer.
  4. Top your pie with the remaining toasted coconut and pecans. Chill the pie in the refrigerator for at least 4 hours or until it becomes firm.
  5. When you’re ready to serve, remove the pie from the refrigerator. Garnish each slice with whipped cream and whole pecans.
