  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups dried cranberries (Craisins)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually mix this into the wet ingredients.
  5. Fold in the rolled oats and cranberries. If using, add the chopped nuts gently.
  6. Drop rounded tablespoons of dough onto the baking sheets. Bake for 10-12 minutes until golden at the edges.
  7. Cool on the baking sheets for 5 minutes before transferring to a wire rack.

Notes

For softer cookies, slightly underbake them. Store them in an airtight container.
