- To start, preheat your oven to 375°F (190°C) and grease your 9×13-inch baking dish. In a medium saucepan, combine the sliced peaches with 1/2 cup of granulated sugar, 1/2 cup of brown sugar, lemon juice, and optional cornstarch. Bring this mixture over medium heat and let it simmer for about 5 to 7 minutes.
- While the peaches are enjoying a warm bath, it’s time to whip up the batter. In a large mixing bowl, whisk together the remaining 1/2 cup of granulated sugar, flour, baking powder, and salt. Make a well in the center and whisk in the milk and vanilla extract until you achieve a smooth batter.
- Begin by pouring the melted butter directly into the prepared baking dish. Next, carefully pour the batter over the melted butter. Do not stir this mixture; simply let it sit. Gently spoon the peach mixture over the top of the batter, ensuring an even distribution.
- For an extra depth of flavor, sprinkle the top of the peach cobbler with ground cinnamon and nutmeg. Bake the cobbler in your preheated oven for 40 to 45 minutes until the top turns a lovely golden brown.
