  • 1 1/2 cups finely chopped tart apples
  • 1 cup raisins
  • 1 cup currants
  • 1/2 cup chopped dried figs or dates

  • 1/2 cup brown sugar
  • 1/4 cup molasses or dark corn syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • Juice and zest of 1 lemon
  • Juice and zest of 1 orange
  • 1/4 cup apple cider or brandy
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar (optional)
  • 1 cup unsalted butter, chilled and cubed
  • 68 tablespoons ice water
  • 1 egg (for egg wash)

Instructions

  1. Begin your journey by preparing the mincemeat filling. In a heavy-bottomed saucepan, combine your choice of finely chopped beef or suet, tart apples, raisins, currants, figs, and candied citrus peel. Set your stove to a medium heat and mix the ingredients well.
  2. Next, it’s time to add the sweet and spicy elements! Pour in the molasses, brown sugar, salt, and spices such as cinnamon, nutmeg, cloves, and allspice. Don’t forget the citrus juice and zest along with the apple cider or brandy. Lower the heat and let the mixture simmer gently for about 30 minutes.
  3. While your filling is cooling, you can prepare the pie dough. In a large mixing bowl, combine the flour, salt, and optional granulated sugar. Using a pastry cutter or two knives, cut in the chilled cubed butter until the mixture resembles coarse crumbs.
  4. Preheat your oven to 375°F (190°C). Once your dough is chilled, roll out one disc on a lightly floured surface to form a 12-inch circle. Carefully press this dough into your 9-inch pie dish.
  5. Place your pie in the oven and bake for 45 to 50 minutes, or until the crust is beautifully golden brown and the filling is bubbling.

Notes

For best flavor, make the mincemeat filling a day ahead and refrigerate overnight. Store any leftover pie covered in the refrigerator for up to three days for maximum freshness.
