  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar

Instructions

  1. Begin by heating olive oil in a skillet over medium heat. Add the thinly sliced onions and cook them slowly, stirring often, until they become soft and take on a sumptuous golden-brown hue. This process should take about 10 minutes. Once done, set the caramelized onions aside and allow them to cool slightly as you prepare the remaining ingredients.
  2. In a spacious mixing bowl, combine the cooled onions with crumbled feta cheese, freshness-inducing parsley, and the eggs. Stir the mixture until well-blended. In a separate bowl, whisk together the dry ingredients: all-purpose flour, baking powder, ground black pepper, and salt. Gradually add the dry mix to the onion and feta blend, stirring until a thick batter, akin to a pancake mixture, forms.
  3. Pour vegetable oil into a large skillet and heat it over medium-high. Once the oil is shimmering and hot, drop spoonfuls of the prepared batter into the skillet, gently flattening each spoonful into a round fritter shape. Fry the fritters until they are beautifully golden and crispy on each side, taking about 2 to 3 minutes per side.
