Ingredients

  • 2 large boneless, skinless chicken breasts (sliced into strips)
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup red bell pepper, diced
  • 1/2 cup chopped onions (optional)
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded pepper jack cheese (optional)
  • 4 large flour tortillas
  • 2 tablespoons butter (softened, for brushing tortillas)
  • Fresh parsley or chives, chopped (for garnish)
  • Dipping sauces (ranch, marinara, chipotle mayo – optional)

Instructions

  1. Begin by heating the olive oil in your skillet over medium heat. Once the oil is shimmering, add the sliced chicken breasts. Season them generously with minced garlic, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook the chicken strips for about 6–8 minutes, or until they are golden brown and fully cooked through.
  2. Next, add a little more oil to the same pan, if needed, and toss in the diced red bell pepper and optional chopped onions. Sauté for about 3–4 minutes until the vegetables are softened and have a slight char.
  3. Lay your tortillas flat on a clean surface. Start layering with a generous amount of mozzarella cheese followed by the cooked chicken strips and sautéed veggies. Top with more cheese.
  4. Preheat a clean skillet or grill pan over medium heat. Lightly brush the outer sides of the wraps with softened butter. Carefully place the wraps seam-side down in the hot skillet. Grill for about 2–3 minutes on each side.
  5. Allow the wraps to rest for a minute before slicing them diagonally. Garnish with fresh parsley or chives and serve alongside your choice of dipping sauces.

Notes

Don’t overstuff your wraps; a little bit of cheese and filling goes a long way in preventing any spills during grilling.
