Instructions
- Start by whisking together the flour, sugar, baking powder, and salt in a large mixing bowl.
- In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients. Stir gently just until combined—aim for a slightly lumpy batter.
- Heat a non-stick skillet over medium heat. Lightly grease with butter or a cooking spray.
- While pancakes stay warm, prepare the cream cheese drizzle. Beat together softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Stack pancakes on a plate, and liberally drizzle the cream cheese mixture on top.
