Ingredients

- 500 grams of cod fillets (about 4 fillets)
- 500 grams of cherry tomatoes, halved
- 1 medium onion, finely chopped
- 1 clove of garlic, minced
- 4 sprigs of fresh thyme
- Juice of 1 lemon
- 2 tablespoons of olive oil
- Salt and pepper, to taste
Instructions
- Prepare the Aromatic Base: Sauté the onion and garlic until translucent, then transfer to a baking dish.
- Sear the Cod Fillets: Lightly sear the cod fillets in the same pan for one minute on each side, then add to the baking dish.
- Add the Tomatoes and Seasonings: Scatter halved cherry tomatoes around the cod, sprinkle thyme, salt, and pepper, and drizzle with olive oil.
- Roast in the Oven: Bake at 180°C (350°F) for 20 minutes.
- Serve with Lemon Juice: Squeeze fresh lemon juice over the dish before serving.
