  • ½ cup milk
  • 3½ teaspoons instant dry yeast
  • 2¼ cups all-purpose flour
  • ⅔ cup rainbow sprinkles, divided, plus more for topping
  • 1 cup confectioner’s sugar
  • 3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Begin by mixing the granulated sugar and cinnamon in a small bowl.
  2. In a large mixing bowl, cream together the softened butter, ½ cup granulated sugar, and salt using a whisk or electric mixer until light and fluffy. Then, add in the egg, milk, instant dry yeast, and flour. Mix until you have a smooth dough. Once combined, gently fold in the rainbow sprinkles.
  3. After the dough has risen, lightly flour your work surface and roll it out into a rectangle measuring approximately 9×12 inches. Spread the remaining 4 tablespoons of softened butter evenly over the surface of the rolled-out dough. Next, sprinkle the cinnamon mixture generously over the buttered dough.
  4. Starting from one long edge, tightly roll the dough into a cylinder shape. Slice the log into 8 even pieces.
  5. Take the sliced rolls and place them in a buttered cast iron skillet or a baking dish. Cover and refrigerate overnight.
  6. When you are ready to bake, let the rolls rise in a warm place for about 90 minutes. Preheat your oven to 325°F (163°C) and bake for 32-34 minutes.
  7. Prepare the glaze by mixing together the confectioner’s sugar, 3 tablespoons of milk, and vanilla extract until smooth.
  8. Let the rolls cool for about 15 minutes, then drizzle the glaze over the warm rolls and top with extra rainbow sprinkles.
